Your Questions About Halibut

by andre1 on May 17, 2012

Sandra asks…

Halibut for lunch, how should I cook it?

andre1 answers:

Lemon caper sauce is my absolute favorite on any fish....
Halibut With Lemon and Caper SauceIf using fish steaks, chill them in the freezer for 1/2 to 1 hour so they will be easy to slice. Fillets of sole, orange roughy, ocean perch or catfish are delicious cooked this way but do not need to be sliced before cooking.
Ingredients
1/2 lemon, or more to taste
1/4 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon freshly
1 pound (about 1 1/2 inches thick), cut into 1/4-inch-thick diagonal slices
2 teaspoons extra-virgin olive oil
1 clove clove garlic, minced
1/3 cup fish stock or reduced-sodium chicken broth
1 tablespoon capers (optional)
2 teaspoons butter
1 tablespoon chopped fresh parsley

Directions
1. With a sharp knife, remove skin and white pith from lemon and discard. Cut the segments of the fruit away from their surrounding membranes into a bowl (discard seeds). Strain and reserve juice. Chop fruit coarsely.
2. Combine flour, salt and pepper in a shallow dish. Dredge fish lightly in the flour mixture. Heat oil in a large nonstick skillet over medium-high heat. Cook the fish until the outside is golden brown and the interior is opaque, 1 to 3 minutes per side. Transfer to plates or a platter and keep warm.
3. Add garlic to the pan and cook, stirring, for several seconds. Add fish stock or broth and bring to a boil, stirring. Add lemon and juice, capers (if using) and butter, swirling the pan until the butter has melted. Spoon the sauce over the fish. Sprinkle with parsley and grind more pepper over top

Helen asks…

I have a skin on halibut fillet?

I want to make my own fish sticks with it but I don't know if I can leave the skin on or should I take it off? I have never skinned a fish...what is the to do it? Any advice welcome! Thank you!
If I pre-cook it to skin it will I still be able to cook it again with the breading????

andre1 answers:

To skin a fish: You must have a sharp knife. Place the fish skin side down on a cutting board. Slide the knife between the skin and flesh until you can hold onto a corner of the skin, Then stroke the knife between the skin and flesh, keeping the knife parallel to the board or very slightly angled down, without going through the skin.

Chris asks…

Any Halibut fishermen out there?

Largest one I have caught was 214lbs how about you?
Here is a big halibut;

http://www.oregon-anglers.org/413%20halibut.jpg

But then they dont taste good that big.

andre1 answers:

65'er be the biggest and to the best of my recollection (pre "teeny- boppin' " years ;) ) ~ Halibut was purrrty good tastin' (Step-mom was a Tlingit Indian and did she know how ta' cook!!). Caught in AK., ie., Gastineau Channel near Juneau. Not anything close to yours butttt, at the time for my age, that thing looked like Moby Dick ;) ...

William asks…

can i use a gap hook to take a halibut out of the water in san francisco bay?

andre1 answers:

It's called a gaff -- a big hook on a handle a few feet long. Yes it's legal, as long as the fish is legal. Halibut have to be 22 inches long to keep, so if the fish is smaller or borderline, use a net. A net is also good for smaller keepers because it doesn't leave a hole and wreck the meat near it.

On the other hand, if a halibut is over 10 pounds or so (30 inches), I strongly suggest you use a gaff. Trying to net a big halibut is a great way to lose it, or to have it jump out of the boat, or just wreck the net (I've seen all three happen). Use the gaff to stick the fish just behind the head, then pull it over the rail quickly before it comes off, then whack it between the eyes to quiet it down before taking it off the hook.

Ruth asks…

what was the last thing you did just for the halibut?

andre1 answers:

Musseled my way outside...Too Cod to stay out there though ..
So I went back to my Plaice

Carol asks…

What's a good fish to grill whole? Not too big, not too expensive?

Since next week is supposed to be warm enough, I wanted to grill. I've always wanted to grill a whole fish and wanted to know what's a good fish to grill whole. I like milder, somewhat firm fish like cod or halibut (don't really like the mushy texture of flounder). What would be a good fish to grill that's not too big (I am the only one in the family that really likes fish), not too expensive (in case I completely mess it up), and mild tasting. Thanks.

andre1 answers:

Rainbow Trout is good with some Rosemary inside and Lemon on top?

Donald asks…

Redondo beach fishing?

today i was fishing with a few of my buddies, one guy caught a halibut with a lure that wasn't even moving. When i was fishing I've seen a few fish swim near my bait then swim away,(i was using cut squid) than i saw a massive school of bonito, 3 them came after my lure but then they lots interest of that to, what am i doing wrong?

andre1 answers:

I used to catch lots of bonito off the little pier in the Redondo harbor (or off the rock wall), either on live anchovies or on a "bonito feather", a yellow or fly a couple inches long on a 6-foot leader behind a plastic bubble half full of water. You cast it out, and splash the bubble in, the ruckus would get the fish's attention, and one would snatch the feather. If you don't have , this is probably the best way to catch bonito off a pier.

I also remember seeing schools of bonito cruising around in the inner basin of the harbor, under the docks, a lot when I was a kid. I never got any of these fish to bite, though. I got the idea these fish were in a "traveling" mode, rather than a "feeding" mode, though if I'd had live bait to toss at them it probably would have woken them up.

As for the halibut, I suspect the fish saw the lure sinking and grabbed it as soon as it hit the bottom. Halibut don't run with baits, so it might have been just sitting there with the lure in its mouth until your friend tightened the line and felt it. (Halibut have to be 22 inches to keep -- if the fish was short, I hope your friend released it -- otherwise the fine could run to a few hundred dollars if he's caught.)

With squid, all you're likely to catch from the pier are small perch and smelt near the pilings (the fish you saw were probably smelt.) You'll do better if you hang the bait deeper, using small strips of squid (an inch long or smaller) on about a #8 hook.

George asks…

I need HELP finding a great /reel for a bday gift for my boyfriend!!?

My boyfriend's bday is in two weeks and I wanted to get him something nice and something I know he would love. Fishing is his passion, him and his friends are religious about it. He likes both salt and fresh water fishing but salt water is his favorite. So, I am looking for a well made quality fishing rod and reel for him the only problem is I have NO idea what I'm looking for. Does anyone know the best brands and how long and strong the rod should be? Also, something that works well with catching Stripers, Rock Fish, Cods, or Halibuts. And if someone could suggest where to buy this rod/reel. Please, I need help, I don't know what I'm doing. Thanks everyone!!!!

andre1 answers:

Try going to the Bass Pro Shops web site. They have a large saltwater selection with many top brands of gear. They also can ship very quickly so you get it before his Bday. Another idea you might want to try, see if you have any Bass Pro Shops, Gander Mountain or Cabella's outlet stores in your area. The employees at these stores are all fishing nuts and they are more than happy to help you find the best products for your needs. And finally, Penn is a great brand name. They make quality products and they have a wide price range to fit anyone's budget.

Your Questions About Fafsa

by andre1 on May 14, 2012

Richard asks…

What will be my expected contribution in relation to the fafsa?

I live in a single parent home (my other parent will not be paying anything). My mom makes around $80,000 per year. Our house is valued around $120,000. I didn't want to go through the trouble of filing a fafsa as I am only a sophomore, so I was looking for an estimate as to what our family's expected contribution will be. !

andre1 answers:

Your EFC ( Estimated Expected Family Contribution) is based on a number of different things.. The family size, your parents (and yours if you worked enough to file taxes ) the Ajusted Gross Income,Working Wages Salaries and Tips, exemptions, Amount with income tax paid. Different questions about money coming in and out, if a single parent (living apart for more than 6 months of the year or divorced) amount of assests not including the home you live in, ect.. Thats not something that anyone could really estimate.. Sorry that doesnt help much

William asks…

How much is considered too much for parent's annual salary for FAFSA to deny one's application?

I want to apply for FAFSA for this fall however I have heard that I may not be eligible or I may not receive sufficient funds. My mother is the only working parent and she makes around $60,000 - $79,000 a year (she is an RN). She provides for my father and I (I am an only child). Is her salary considered too much to receive funds from FAFSA? If so, what is the limit?

andre1 answers:

There is no set income level. There are many many other factors that go into calculating your EFC. Also, FAFSA doesn't completely deny anyone. Everyone qualifies for a federal stafford unsubsidized loan. You will need to fill out the FAFSA to figure out what you qualify for.

James asks…

What exactly does the Expected Family Contribution mean on the FAFSA?

I filled out the FAFSA and my EFC is $15,000, which is ridiculous because my Dad was laid off and has been on unemployment for 5 months, and Mom works as a manager at Target. School costs $9,500. Does that mean I am not eligible for any ?
Does anyone know of any good scholarships? My GPA is really good, and I'm transferring as a junior with a major in Genetics and Cell Biology. I'm working as an intern, and I'll only net about $4,000. ANY advice would be really appreciated.
I should also mention that my parents have told me there isn't any money for me. No college fund for Chris. Anything I can get other than loans?

andre1 answers:

Take the info about being laid off to your financial at the school. My sister was just starting the process to apply to college when our dad got laid off, and the financial aid office helped come up with some extra funds.

Ken asks…

How long do i have to wait until i get a response from FAFSA?

I just submitted an application for FAFSA and in order to apply for any other grants i have to wait for their answers. How long does it take to get a response from FAFSA?

andre1 answers:

FAFSA is just the name of the form, forms cannot respond, the government will respond. Since you have filled this out late in the game it may take longer, usually a week when they are in peek processing, so it may take longer. After that it goes to the school, they will take 4-8 weeks to return an aid award letter to you.

David asks…

After filling out the FAFSA for school what else do I need to do to receive financial aid?

I already got accepted to the college and I filled out the FAFSA.Will I just get a student aid report from the school? Or do I need to do something else?

andre1 answers:

In theory, the only thing you need to do in order to obtain Federal Aid is complete the FAFSA with your school's code 6-digit code on it. However, your school can require a number of other items from you before your application is considered complete, as follows:

Make sure that your school doesn't have a separate institutional application. Many schools do have their own form on which they collect supplemental information. If they have one, complete it ASAP for maximum consideration for financial aid.

Many schools now require their students to submit copies of parent [if you are dependent] and student tax returns, W2s included. Some schools require these items from you ONLY IF you are selected for Verification. Check the SAR (Student Aid Report) -- which will be sent to you by FAFSA Central Processing once your form is processed -- to see if you have been selected for Verification (this will appear in the Comments section).

If you're been selected for Verification (or if your school is one of several that verifies ALL applicants), you will also need to complete a Verification Worksheet -- either the standard federal form or a form that the school has created. This form will ask questions about your untaxed income, # in household, # in college, etc.

If this is not your first time in college, you may need to provide your financial aid office with information about your old school. There are a few schools out there that require something they refer to as a "financial aid transcript." On this form, they might ask you for information about scholarships/awards that you received in the past. (Sometimes your current school will confirm this data directly with your old school, so be honest).

If you are a dependent student with siblings in college, your school may actually require you to send a form to your sibling's school for his/her Registrar to certify your sister/brother's enrollment there. (Why do they do this? Because every sibling you have in school lowers your EFC and increases your eligibility for aid.) These types of forms are more rare.

Lastly, if this is your first year in college, make sure your Admissions file is complete. Many aspects of your Fnancial Aid award depend on this. For example, your financial aid cannot be disbursed until your school has confirmed that you have earned a "qualifying degree" (i.e. They must have your final high school transcript that states that you officially graduated before you can get your money).

[See the links below for examples of some of the types of forms mentioned above.]
